Honey Cookies

My mother's old German recipe

Ingredients

  • 1⁄2 cup honey
  • 1⁄2 cup milk
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 1 stick margarine
  • 2 eggs
  • 4 cups flour
  • 1 teaspoon cardamom
  • 1 teaspoon cinnamon
  • 1⁄2 teaspoon nutmeg
  • 1⁄2 teaspoon cloves
  • 1 teaspoon salt
  • 1 teaspoon baking powder

Egg Wash

  • 1 egg white
  • 1 tablespoon water
  • Beat egg white with water until frothy.

Preparation

Heat honey and milk together. Stir in the baking soda and cool. Cream the sugar and margarine together in a mixer on medium speed. Add two eggs and beat the mixture until light and fluffy. Stir in the other ingredients and mix thoroughly. Chill, and roll and cut, or shape the dough into balls and flatten. Place them on a greased cookie sheet. Brush the cookies with the egg wash and sprinkle with colored sugar
if desired. Bake at 350 degrees for 10 to12 minutes. Cool on a rack and store in an airtight container. Makes 3 to 4 dozen cookies.
