Not only did Nancy share her kitchen with us for the 2012 Ultimate Up North Kitchen Tour, she also shared this delicious recipe for lemon coolers.
1 pint half-and-half cream
1 cup sugar
2 tablespoons lemon juice
¼ teaspoon lemon extract
Blend all ingredients for 5 minutes and pour into parfait glasses. Place glasses in freezer.
One hour before serving, remove from freezer and place in refrigerator. Top with a mint leaf and/or fruit like raspberry or strawberry. Serve with biscotti.
