Pumpkin Chili

Pumpkin Chili

Ingredients

  • 1 T. canola oil
  • 1 onion, peeled and diced
  • 1 clove garlic, peeled and diced
  • 11/2 lb. lean ground beef, ground turkey or Plevalean (the low fat beef/cherry hybrid from Pleva’s meats in Cedar.)
  • 2 15-oz. cans cannellini beans, 1 drained, 1 not
  • 16 oz. chopped tomatoes
  • 1 C. fresh baked and puréed pumpkin or
  • 1 C. canned pumpkin
  • 4 oz. chopped green chilis
  • 1 T. cumin
  • 1 T. chili powder
  • 1 t. sugar
  • 1 t. salt
  • 1/2 t. cinnamon
  • 1/2 t. unsweetened cocoa

Preparation

Sauté garlic and onion in oil. Add ground beef or turkey and brown. Add remaining ingredients, cover and simmer for an hour, stirring occasionally. (For an even healthier version, substitute
Plevalean for the meat. It’s a cherry-beef ground meat mix sold through Pleva’s Meat in Cedar, 231-228-5000.)
