Ingredients

9 Bean Rows red giant mustard greens
9 Bean Rows spinach
9 Bean Rows wild leeks
Spring Hollow Farms kohlrabi micro greens
Avocado
Raw sunflower seeds
Wild leek infused olive oil (recipe link)
Pickled leek juice (recipe link)
Food for Thought cherry honey mustard

Preparation

Remove stems from two cups mustard greens and one cup spinach. Slice three leek whites and mince leek greens. Slice one avocado. Plate mustard greens, spinach, avocado and one half cup micro greens. Whisk two tablespoons oil, with three tablespoons pickled leek juice and one teaspoon mustard. Top salad with one tablespoon sunflower seeds, leek greens, leek whites and drizzle with one tablespoon dressing.
