Ingredients

9 Bean Rows baby white swiss chard
9 Bean Rows  pea shoots
9 Bean Rows chives
9 Bean Rows garlic scapes
Spring Hollow Farm china rose radish micro greens
Pea pods
Lime
Tahini
Tamari
Cayenne
Raw sesame seeds
Food for Thought local wild star thistle honey
Rice noodles

Preparation

Cook rice noodles, reserve one cup noodle pasta water, drain noodles and chill. Zest lime, juice lime, mince zest and mince two tablespoons garlic scapes. Mix three tablespoons tahini, one teaspoon tamari, lime juice, garlic scapes, one quarter teaspoon cayenne, one tablespoon sesame seeds, one teaspoon honey and one tablespoon noodle water (add additional noodle water as desired). Plate raw wrap ingredients and noodles (swiss card leaves, pea shoots, micro greens, and pea pods) so everyone can make their own individual wraps (be sure to include the sauce for the wraps and chives to tie each wrap closed with).
